Each month we feature one of Donfaye's recipes that she makes for guests of the inn. Bring a taste of Sutherland House back with you. Enjoy these Banana & Chocolate Chip Bars with your morning coffee or as a sweet afternoon dessert.
Ingredients:
4 very ripe bananas (approximately 1 2/3 cups)
¾ cup brown sugar
¼ cup oil OR applesauce
1/3 cup milk
½ teaspoon banana extract
2 eggs
1 ¾ cup all purpose flour OR whole wheat flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
1 cup mini chocolate chips, divided
¾ cup chopped walnuts or peanuts
Instructions:
Heat oven to 350⁰. Spray a 15x10.5 baking pan, or two 13x9 pans. Peel and mash bananas. Stir in brown sugar, oil, milk, banana extract, and eggs until well combined. Add in flour, baking soda, salt and cinnamon. Fold in one half of the chocolate chips, as well as the nuts.
Spread the batter into the prepared pan(s) and sprinkle with the remaining chocolate chips on top. Bake 18-20 minutes, until a wooden toothpick in center comes out clean. Cool completely and cut into squares.
