Guests often request recipes for dishes served at breakfast, so each month we will share one of Faye’s
recipes. We hope that you enjoy this month’s recipe!
3 or 4 ripe bananas, smashed
1/3 cup melted butter
¾ cup sugar
1 egg, beaten
1 tsp. vanilla
1 tsp. baking soda
Pinch of salt
1 ½ cups flour
Preheat oven to 350⁰. With a wooden spoon, mix the butter into the bananas in a large mixing bowl. Mix in the egg,
sugar and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour and mix. Pour the batter
into a greased loaf pan. Bake for 1 hour. Cool on a rack.
