Recipe: Blueberry Streusel Muffins

Guests often request recipes for dishes served at breakfast, so each month we will share one of Faye’s recipes. We hope that you enjoy this month’s recipe!


Blueberry Streusel Muffins

Makes 12 mouth-watering muffins


For the Muffins:
 2 cups flour

 1 TBSP baking powder

 ½ tsp. salt

 ½ cup sugar

 ½ cup milk

 1 egg, slightly beaten

 1 small banana, mashed

 ¼ cup melted butter

 1 teas. Vanilla

 1 cup blueberries


For the Streusel:

 2 TBSP flour

 ¼ cup brown sugar

 ½ teas. Cinnamon

 3 TBSP butter

 2 TBSP oatmeal




Preheat the oven to 350⁰.  Spray the muffin pans with nonstick spray or use paper liners.

Mix the flour, baking powder and salt together with a fork.  Add the remaining ingredients EXCEPT the blueberries, combining well.  Fold in the blueberries.  Spoon the batter into the prepared muffin pan. 

To make the streusel topping, mix all ingredients except the butter.  Cut the butter into the mixture until coarse crumbs are formed.  Spoon the streusel over the top of the muffins.

Bake for approximately 20 minutes until a toothpick comes out clean.
